Recipe: pumpkin waffles



It's fall and you know what that means? Everything pumpkin! I just love pumpkins and everything you can make with them like roasted pumpkin seeds and Shipyard pumpkin head beer (not that I enjoy beer that much). 

Here is a recipe for some amazing pumpkin waffles that I like to make in the Fall. The prep and cook time is short and they taste delicious!

Prep time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes

Tip: mix by hand to get a thicker batter

Ingredients:
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
2 pinches of salt
2 fresh eggs
1/4 cup of brown sugar
1 cup can pumpkin puree (I prefer fresh pumpkin but it's not easy to do)
3 cups milk
4 tablespoons butter (well melted)

Directions:
1). Mix together flour, baking soda, cinnamon, nutmeg, ginger, and salt in a large mixing bowl

2). Use a second bowl to mix the eggs, sugar, pumpkin, milk and butter.

3). mix all together and pour into waffle iron accordingly. This should only take 4-5 minutes to cook.

Top with butter, warm maple syrup or your favorite fruits or if your like me some strawberry jam.
